Rustic Salmon

A few years ago, I was at a weekend seminar in Los Angeles. At lunch, I went downstairs to the restaurant and ordered this incredible salmon dish. When I saw how easy it would be to make, I had to recreate it at home. So here it is: my Rustic Salmon. I am sure you will enjoy it as much as I do.

Spicy Sausage and Seafood Gumbo

If you love New Orleans, andouille sausage and seafood, then this gumbo will be a big hit. My Spicy Sausage and Seafood gumbo consists of assorted shellfish and white fish, andouille sausage and vegetables, the holy trinity to be exact and spices. All of this blends harmoniously with Creole seasoning, pureed tomatoes and chicken stock to create the ultimate gumbo. Serve it over popcorn rice and you’ll swear your down on Bourbon street listening to a jazz band.

Pan Seared Tilapia with Chili Lime Butter and Corn Relish

Tilapia filets, lightly seasoned then pan seared. Served on top of a bed of sauteed spinach, topped with a chili lime butter sauce and corn relish, this dish will have your taste buds doin' the happy dance. All fresh ingredients and it tastes like summer on a plate. It may sound like a lot but it is in fact quite simple to make. The brightly flavored corn relish can also be used on chicken, pork or other kinds of fish. Serve it at your next dinner party and your guests will be amazed.

Stuffed Poblano Peppers

Fire roasted poblano peppers filled with a spicy chicken and rice mixture topped with melted pepper jack cheese and a cool dollop of sour cream. Using Sriracha sauce you can spice these up as much or as little as you want. Come and enjoy a south of the border treat!

Pomodoro Sauce

This multipurpose marinara-style sauce is excellent with pasta. Add your favorite meatball recipe and you have yourself a hearty meal. I use this sauce when I make my lasagna. I also use it as a dipping sauce for fried mozzarella and stuffed artichoke hearts. However you use it, it's a tasty sauce and a cinch to make. It also freezes well so you can double or even triple the recipe and freeze it in containers.

Tropical Fish Tacos

These tacos are made with Cajun seared tilapia topped with a tropical cole slaw and served in a crispy (not greasy) tortilla shell with pepper jack cheese. One bit of these tacos and you'll be picturing yourself on a white sand beach somewhere in the tropics with an ice cold beverage!

Pan Seared Salmon with a Citrus Fennel Salad

This is a simple yet elegant salmon dish that anyone can make. The delicate flavor of the salmon is complimented by the fresh crunch of the fennel and the tartness of the citrus. Finally, we top it with micro greens for another layer of flavor.

Grilled Vegetable Sandwich

The lemon herb marinade and the char from the grill really give the vegetables in this sandwich a delightful punch. Assembled on lightly toasted Naan bread with feta, chipotle mustard and mayonnaise, it is a hearty, flavorful sandwich for vegetarians and carnivores alike.
